That Cherish Finden is pastry royalty is not up for debate: she’s a Bake Off: The Professionals judge, former executive pastry chef at The Langham, and cake maker for both Lady Gaga and Queen Elizabeth.
Cherish is now opening her own patisserie, SHIOK!, in Devonshire House next to the Pan Pacific Hotel, whose Orchid Lounge she helped put on the map with her Singapore-inspired afternoon teas.
‘In Singapore the word SHIOK! conveys a feeling of pure pleasure and happiness and this is what I want to capture,’ said Finden. ‘The patisserie is going to be somewhere you want to bring your loved ones, any time throughout the day for an out-of-this-world pastry.’
The pastry chef is known for her intricate designs and meticulously executed sweet pastries – and for putting a Singaporean spin on British classics. SHIOK! will offer plenty in that vein: chocolate bon bons filled with coconut, gula malaka, matcha and yuzu, Singaporean pineapple tarts and polo buns with coffee, pandan or summer berries.
Sausage shokupan (a kind of sausage roll) and pork floss buns are the patisserie’s savoury options, and drinks will include bubble tea, juice and champagne. We’re looking forward to the whimsical chocolate teapot and ‘kopu tarik’, a coffee selection served with edible cups and spoons.
