In this week’s Q&A we hear from Huzefa Sajawal of Fatt Pundit. He speaks about how his grandmother cooking Lucknow food made him realise he wanted to work in hospitality, getting his start in Mumbai and why Dubai is the most exciting city for hospitality.
My entire childhood was spent watching my grandmother cook delicious Lucknow food and how she would serve with so much love and care which made me realise my passion for food and service industry. I completed my degree in hospitality from Mumbai and later moved to London to complete my master’s in hospitality.
I started as an intern at Taj lands end Mumbai. I got my first job at JW Marriott Grosvenor House London where my professional schooling was done and where I learnt everything I know about restaurants.

Chef Ollie Couillaud, he’s most well-known for his French brasserie Bord’eaux situated in Grosvenor House. I had the opportunity to work under him for a while. His passion for sourcing ingredients and cooking techniques was inspirational. They joy he got from hosting people and serving them had a huge influence on my career.
India has always been a land of cultures. With 29 states and a variety of cultures my next step would be to locate more hidden gems and bring them to London.
Always believe in yourself. As cliché and bookish it sounds it’s also true and extremely important. At all times you must believe that you can achieve something only then shall all the power is in the world help you achieve your goal. Never compromise on your dream. Once you have a vision, work hard and accomplish it.
A few months ago, I had the chance to travel to Turkey for a mini holiday. I visited Cappadocia – a historical region famous for its fair chimneys and culture. There I had a home cooked meal by a chef who runs a restaurant from his home kitchen. The entire experience was absolutely magical
