Robin and Sarah Gill are opening new wine bar Bottle & Rye in Brixton this July.
The couple, who are also behind the critically acclaimed Bermondsey Larder, Clapham Italian Sorella, and Darby’s, a New York-style venue in Vauxhall, are this time looking to Paris for inspiration.
Their new 28-cover bistro, led by Robin and head chef Ben Hughes-Gage, formerly of Lino, will serve a menu that pays homage to the all-day bistros of Paris, ‘with dishes that play on French classics.’
‘Bottle & Rye is inspired by the Parisian café culture that Sarah and I are so fond of,’ Gill said.
‘These bistros are filled from morning through to night and we love how these little gems are embraced by the city.’
Dishes will include Ogleshield pougères with pickled walnut; Vichyssoise oyster tartare; smoked eel brandade with pink fir crisps; and Marinda tomato tarte fine with kalamata olives.
Brunch will be served from 10am to 2.30pm. There will be the likes of poached Cacklebean eggs with boudin noir and hollandaise, and croque madames.
Front of house will be led by Lewis Wright, who will also curate the wine list, focusing on low-intervention European wines. Bottles will start at £26 and glasses at £5, and a short cocktail menu will be available. Beers will come from Brixton Brewery.
A marble, brass and walnut bar will be the focal point of the space, and the interior will be modelled after European cafés.
There’s no exact opening date yet, but the soft launch will be announced via Bottle and Rye’s Instagram, so keep an eye out.
