Sous Chef, Lantana

UnHerd is a successful London-based publication whose mission is to bring alternate viewpoints on the big stories of the world and provide a platform to shine a light on lesser-covered topics.

In the Autumn UnHerd will cross into the physical world. A new concept in historic Old Queen St, Westminster, will launch as a place for the subscribers to call home, with Lantana as its operating partner. The venue will comprise of a 50-cover restaurant and a large private members and event space.

Lantana will be designing and delivering this one-of-kind customer experience; a place to debate the news of the day over quality British food in one of the most unique restaurant launches of 2022.

The ideal Sous Chef candidate:

• Aspires to be our next Head Chef;
• Shares our passion for quality and seasonality;
• Can maintain quality and consistency while producing high volume;
• Embraces tip to stalk cooking, pickling, fermenting, curing, minimising waste, and maximising flavour;
• Has strong leadership and organisational skills;
• Has a good understanding of managing stock levels, GPs and labour within budgetary requirements; and
• Thrives working in a team to deliver outstanding food quality.

You will be working in a team of 8 chefs to deliver the varied catering needs of the client from staff dining, client entertaining, staff and client events, outdoor dining, to take home meals for staff.

This is a salaried position; up to £36,000 per annum depending on experience, for an average of 45 hours per week, Monday to Friday. You will also receive 28 days paid holiday per year and enrolment into our company pension scheme.
