The Michelin star brothers Chris and Jeff Galvin have announced their latest restaurant opening, Galvin Bar & Grill, a collaboration with head chef Adam Gray at Bloomsbury’s Kimpton Fitzroy London.
The Galvin brothers, together with Gray, “will be taking a modern-day approach to the British bar and grill with a menu that focuses on ethically sourced produce.”
An announcement on Monday said the menu will be influenced by other cultures, “reflecting the multicultural nature of modern Britain”, and will reflect the way they would like to see Britain today: “Ethical, generous and open.”
Guests can expect dishes such as Dorset lobster omelette; beef short rib with salted baked celeriac, bone marrow and ale braised onions; and a turbot T-bone with aromatic fennel, potato terrine and herb butter sauce. The grill will also serve a variety of 32-day aged beef cuts and British seafood.
Chris said “up to fifty percent of diners in our other Galvin restaurants choose a plant-based or vegetarian tasting menu, so we have enjoyed working with Adam to ensure this is reflected in the menu.” One meat-free dish will include tartare of late-harvest tomatoes and grilled sweet peppers and roasted pumpkin with Berkswell and sage.
The 100-cover Galvin Bar & Grill will take residence in the “opulent grand dining room” of the hotel. It was designed by Charles Fitzroy Doll in 1898 and was used as inspiration for his dining room on RMS Titanic, so expect “antique brass tables and banquette seating upholstered in deep blue velvet and leather.” Black and white portraits taken by British fashion photographer John Swannell will also hang on the walls, the announcement said.
The Galvin brothers have 75 years of hospitality experience between them and are the first British brothers to hold a Michelin Star each in different properties, while Gray is best known in the industry for his long stint leading the team at Rhodes 24.
Chris added: “This opening is a very special one for us. Having worked in restaurants in a number of London’s best hotels, we have always enjoyed welcoming guests from far and wide and are looking forward to showing them the best of what modern British cuisine has to offer.
