Michelin stars shine in a challenging year

CODE congratulates the many restaurants recognised in the Michelin awards for 2021. Watching the ceremony online last night, it was clear that despite the long periods of closure over the months, Michelin inspectors had continued their visits to restaurants in Britain and Republic of Ireland whenever possible, which is a feat in itself. 

First and most importantly, there was the rare accolade of three Michelin stars awarded to two London restaurants – Core by Clare Smyth and Hélène Darroze at the Connaught. It was wonderful both to see Hélène’s shocked and delighted reaction to receiving her three-star chef jacket and to hear the roar of pleasure from Core’s team as the camera filmed Clare Smyth. The triumphs of these two chefs demonstrate their standing on the world stage – and that they happen both to be women is a cause for celebration too.  

Terrific news for Story, Da Terra and A Wong as the three restaurants moved up from one to two stars – all very well deserved – and 17 restaurants all received their first Michelin star this year. There was delight as Benares regained the accolade, Tom Brown’s Cornerstone was finally acknowledged, with Casa Fofō making it two for Hackney, while Davies and Brook’s pedigree and Muse’s concept made them a shoo-in. SO|LA in Soho had changed completely and got the nod, while the biggest surprise was Behind: Andy Beynon’s chefs’ table restaurant had only been open for a month or so… 

Outside the capital, CODE is delighted to congratulate Osip, Roots, Cail Bruich, dede, Outlaw’s New Road, hide & fox, Hjem, Pea Porridge, Shaun Rankin at Grantley Hall and Latymer. 

In a time of extreme challenge for hospitality, it is a much-needed boost to be able to acknowledge the hard work and creativity of many in the industry via the venerable Michelin star awards – they are still the prize that all chefs and restaurateurs strive for. CODE hopes passionately that it won’t be too much longer now before the restaurant doors open again and the chefs and teams can be congratulated in person for their achievements.
