Co-owner of Quality Chop House, Portland and Clipstone, William Lander is now collaborating with the Hoxton Holborn to launch a new restaurant and wine bar, on the hotel’s ground floor. Rondo is set to launch on 1 September.
Chris Gillard, previously at St. John for 15 years, joins as head chef and reunites with Lander, having worked with him during his stint as a barman when he was 18.
Guests at the restaurant, which is aiming for a neighbourhood atmosphere, can expect an interesting wine list and a seasonal menu with British influences. Highlights include crispy pig’s cheek salad and a bone marrow toastie in tribute to his time at St John.
As you’d expect from Lander, the wine list will be eclectic and interesting, a celebration of European winemakers, with a wine wall forming the centrepiece of the room.
“It’s a great pleasure to have helped bring Rondo to life – we have tried to create exactly the type of restaurant we ourselves love going to” says Lander. “We aim to celebrate wine in all its manifest complexity rather than narrow in on one particular style or region. Our focus, therefore, is on the winemaker rather than the type of wine they happen to make.”
